This year’s Food Library revelation. We take apples from the garden and the ingredients of Autumn with dried fruits and steep them in a rich mix of vinegar, spices and sugar, infusing them all for serval days before sealing everything up raw in a jar. It produces a slaw-like sweet and crunchy condiment that doesn’t leave our table. Fabulous with strong cheeses and with hot sausages (meat or vegan).
