Zero Waste Cheese Making with Julia Bell

Learn how to make waste milk into delicious Ricotta and Mozzarella Cheese, followed by a light lunch (with cheese).

During these brand new sessions we will cover:

  • An introduction to Julia and her history as a chef and food waste warrior
  • Basic food hygiene and preparation
  • Ricotta making
  • Mozzarella making (beware, microwave required!)
  • Time for questions and to use Food Library books whilst lunch is prepared and served
  • Light lunch (Example menu, homemade pasta with ricotta, tomatoes and fresh herbs)

About Julia:

Julia Bell is a Northamptonshire based chef and food waste warrior. She was trained in Cordon Bleu cookery before embarking on a career cheffing for Directors Dining Rooms, feeding stock brokers in London and judges in Birmingham. Over the years Julia has evolved her passion for cooking, combined with her Italian heritage and drive to make a difference in the food industry by becoming a food rescue hero; spending much of her time collecting waste supermarket produce for local food banks and creative food projects (such as Northamptonโ€™s famous Elsieโ€™s โ€˜Binnersโ€™), as well as assisting businesses and festivals to reduce food waste. She is in constant pursuit of the pleasure and art of making new foods from ingredients that might otherwise end up in landfill.

This workshop is for you if…

  • You own an unused cheese making book or cheese making kit
  • You’re cheese making ‘curious’
  • You often have large quantities of leftover milk, or store milk in the freezer intending to use it
  • You love the idea of using up waste produce to make something new (psssttt…you can do that at our ‘How to Ferment’ workshops too!)
  • You love cheese!

This workshop may not be for you if…

  • You’re vegan or have an allergy (sorry!) – Julia is working on alternative cheeses as there’s plenty of waste non-dairy milk out there. But this workshop is currently using milk from animals
